This is a portrait of Manila based chef Chele González. His work is inspired by the many cultural influences collected from his experiences and travels around South East Asia. He is most inspired, however, by the personal bonds he establishes with the growers, producers, breeders, makers, and communities who have become his friends during these travels. Chele González strives to find new ingredients, flavours and most importantly different ways to understand food. His nomad soul has helped him develop an awareness of common ingredients using innovative techniques paying tribute to culture. Intramuros (Spanish, "within the walls") is the oldest district and historic core of Manila, the capital of the Philippines. Also called the Walled City, it was the original city of Manila and was the seat of government when the Philippines was a component realm of the Spanish Empire. Districts beyond the walls were referred as the extramuros of Manila, meaning "outside the walls". Gaggan in Manila is a collaboration dinner with Gallery Vask of Chef Chele Gonzales and the second Cross Cultures dinner organized by Cheryl Tiu. I've met Chef Gaggan Anand for the first time in Singapore when he won the #1 Spot in Asia's 50 Best Restaurants and second in London, when he won the #10 Spot in World's 50 Best Restaurants. Chele Gonzales is probably one of the Philippines’ most high-profile chefs, who has made an impact on fine dining and culinary circles in Manila. He garnered international fame from his then-restaurant, ‘Vask’, which was ranked amongst the best in all of Asia, having landed Best in Philippines and 35th in Asia in 2017 by The Wolds 50 Best. 2018 marks a new beginning for Chele, with the closing of Vask and rebranding his operations to introduce Gallery By Chele.

Not knowing very much about the Philippines before I visited, I was pleasantly surprised by Manila and Subic and how they both reminded me of America. The highlight of the trip was getting a chance to visit a Vietnamese boat people refugee camp near Baataan. I met some friendly Pinoys too. The food was great. The transportation readily available. And the landscape extremely beautiful. Manila is the capital of the Philippines and the most densely populated city proper in the world. It is located on the eastern shores of the Manila Bay in one of the finest harbors in the country. The Pasig River flows through the middle of the city, dividing it into the north and south. Manila is made up of 16 districts: Binondo, Ermita, Intramuros, Malate, Paco, Pandacan, Port Area, Quiapo, Sampaloc, San Andres, San Miguel, San Nicolas, Santa Ana, Santa Cruz, Santa Mesa and Tondo.
Last month, I went to this ancient Spanish city in the middle of Metro Manila called Intramuros with my friend Harold and had a great time here.
